Pour entire jar of MID'S into a deep saucepan and turn heat to low. Add the spices if desired.
Break each individual egg into a cup and slowly tip them into the tomato sauce.
Cover the pan and simmer over low heat for 5-6 minutes, until the tops are white and the yellow shows of the yolk. You want the yolk to be runny!
Turn off the heat and season the eggs with salt, pepper and parmesan.
Serve in a bowl with garlic toast.
