Looking for a healthier way to enjoy your favorite meal? Use eggplant to replace pizza dough! Cook it out on the barbecue to add a char to the veggie.

Set up your grill so that the eggplant pizzas will be cooking on low heat before beginning your prep. Cut eggplant into 1/2 inch slices. Set out your eggplant rounds on your workspace and drizzle your olive oil on top of the eggplant. Once grill is heated, place the eggplant, olive oil coated side down, onto the grill. Mix the parmesan, mozzarella, salt, and pepper in a bowl. Once bottom of eggplant is lightly charred, flip the eggplants, add MID'S Pizza Sauce, and sprinkle mixture on top of eggplant rounds. Add toppings as desired. Remove once bottom begins to char or cheese is bubbling.
Serving Information
Plate the eggplant pizzas and sprinkle parsley flakes on top. Enjoy!
