Preheat grill to low. Cut eggplant into 1/2 inch slices. Drizzle eggplant rounds with olive oil, then place on the grill with oil coated side down.
Mix the parmesan, mozzarella, salt, and pepper in a bowl.
Once bottom of eggplant is lightly charred, flip the eggplants, add MID'S Pizza Sauce and sprinkle cheese mixture on top. Add toppings as desired.
Remove once bottom begins to char or cheese is bubbling.
Plate the eggplant pizzas and sprinkle parsley flakes on top. Enjoy!
