Seafood Lasagna

INGREDIENTS

  • 6 oz. crab meat
  • 6 oz. lobster meat
  • 6 oz. shrimp
  • 2 cups ricotta cheese
  • 2 cups parmesan cheese, grated
  • 2 eggs
  • 2 Tbsp. dried parsley flakes
  • 2 Tbsp. onion powder
  • 12 lasagna noodles (cooked, rinsed, drained)
  • 1/2 diced onion
  • 2 Tbsp. minced garlic
  • 1 Tbsp. olive oil
  • 28 oz. can crushed tomatoes
  • 32 oz. jar MID'S Three Cheese Sauce
  • 1 cup water

DIRECTIONS

Preheat oven to 350 degrees. Combine crab, lobster, shrimp, ricotta and parmesan cheeses, parsley and onion powder. Mix well, set aside.

Heat olive oil over medium heat. Sauté onion for 5 minutes, then add garlic and sauté for two more minutes. Add crushed tomatoes and ½ cup water. Bring to a slow boil, stirring occasionally. Add MID'S Three Cheese Sauce and the remaining ½ cup water, then bring to a slow boil, stirring occasionally. Slow boil for 10 minutes then simmer for up to ½ hour. Cook, rinse and drain lasagna noodles. 

Cover bottom of a 9x13 inch pan in sauce. Add noodles, spread a layer of seafood and cheese mixture on noodles and cover with a thin layer of sauce. Continue to layer noodles, seafood/cheese mixture and sauce until lasagna is assembled. Spread sauce over top layer. Cover lightly with foil and bake for 45 minutes. Remove foil and bake for an additional 10 minutes. Take out of oven, cover with foil and let stand for 15 minutes prior to cutting and serving.
