Cut eggplant into thin slices. Dip in egg then into a mixture of the bread crumbs, parmesan cheese and seasonings.
Bake on cookie sheet with wire rack at 350 degrees for 10-15 minutes. Remove from oven.
Mix ricotta with 3 eggs, garlic and Italian seasoning to taste. Layer eggplant in baking dish with MID'S Three Cheese Sauce, mozzarella, ricotta and stewed seasoned tomatoes.
Bake at 350 degrees for 30-45 minutes.
Let rest for 30 minutes after taking out of oven.
