Buffalo Chicken Pasta Salad

With Memorial Day around the corner, it's time to start thinking about picnic items to serve up! Rather than being conventional, give this Buffalo Chicken Pasta Salad a whirl. It's sure to be a hit with the kids and adults alike!

INGREDIENTS

  • 1 lb. penne pasta
  • 1 whole rotisserie chicken, shredded
  • 1 c. hot sauce
  • 1 c. MID'S Garlic & Onion
  • 4 tbsp. butter
  • 1 c. shredded Parmesan cheese
  • 1 c. cream cheese
  • 10-15 fresh mozzarella pearls
  • 1 c. sliced cherry tomatoes
  • 1 tbsp. chopped parsley for garnish

DIRECTIONS

  • Follow instructions on box of Penne and boil pasta to al dente texture
  • While the pasta is boiling, pull a deep skillet out and melt the butter and cream cheese until it is a thick liquid-like consistency
  • Once cream cheese is melted, add in hot sauce and MID'S Garlic and Onion, stir until light bubbles reach the surface
  • Now add in shredded rotisserie chicken. Only add in enough until the chicken is covered with sauce with sauce to spare. 
  • Once chicken is covered in sauce, begin to add shredded parmesan cheese. Stir until fully melted and distributed evenly throughout the chicken
  • Drain pasta and combine pasta with the chicken and sauce mixture.
  • Transfer combined pasta to party-ready bowl and refrigerate overnight.
  • Before serving, combine tomatoes and fresh mozzarella throughout the dish 

Serving Information

Garnish with fresh parsley and serve cold!
