Taco Spaghetti

INGREDIENTS

  • 1 tsp. olive oil
  • 1 lb. ground chuck
  • 1 package taco seasoning
  • 1 can RO-TEL mild diced tomatoes and green chilies
  • 1 jar MID'S Sauce
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 Roma tomato
  • 2 green onions
  • Salt & pepper
  • 2 tbsp. chopped fresh cilantro
  • Sour cream

DIRECTIONS

Heat oil in large stockpot on medium-high heat.
Add ground chuck with salt and pepper to taste and cook until brown about 3-5 minutes. Drain excess grease and add taco seasoning package.
Stir in tomatoes, spaghetti, sauce and 2 cups water. Bring to a boil, then reduce heat, cover and simmer until pasta is done, 13-16 minutes.
Remove from heat, add cheeses and cover until melted about 2 minutes.
Add green onions, tomatoes and sour cream and garnish with cilantro.
