Spooky Potato Pizza's

These spooky potato pizzas are gluten-free and the perfect appetizer to pass around at this years Halloween party! 

INGREDIENTS

  • 1 MID'S jar
  • 3 Idaho potatoes
  • 2 Cups of Mozzarella Cheese
  • 1 Cup of Olive Slices
  • 2 Large Slices of Pepperoni
  • 1 Tsp. of Salt
  • 1 Tsp. of Pepper
  • 2 Tbsp Olive Oil

DIRECTIONS

Set oven to 400 degrees. Cut three potatoes in half and drizzle olive oil on all sides of the potato. Sprinkle salt and pepper. Heat potatoes in the oven for 25 minutes. To test if the potato is cooked thoroughly, stick a fork into the cut side, testing for softness. If the potato crumbles, it's done. Layer your favorite MID'S sauce on the flat side of the potato. Sprinkle mozzarella cheese on top. Put back in the oven for 5-10 minutes. Once cheese is golden brown, take the potato pizzas out and add 'spiders' and jack-o-lantern faces. 

Serving Information

Plate. Sprinkle with parsley. Add extra salt and pepper as needed. 

To create 'spiders,' place an olive slice as the 'body' of the spider. Halve three olive slices and position those as the 'legs' of the spider. 

To create the jack-o-lantern, cut a large slice of pepperoni in half. Cut pieces out to get the look of teeth. Use the pieces you cut off as the eyes. 

For a more bite-sized option, you can use red potatoes and modify the recipe accordingly.
