Quick and Easy Meat Lasagna

Household Timesaver Tip: Follow directions as follows until the baking point. Tightly wrap baking dish with plastic wrap followed by a wrap of heavy duty aluminum foil. Freeze for up to 6 weeks. Allow lasagna to completely defrost in a refrigerator before baking.

  1. Preheat oven to 350 degrees.
  2. For the noodles, fill a large bowl with the hottest tap water. Add the noodles and allow them to sit in the water for 20 minutes. Drain.
  3. In a medium bowl, beat the egg, and then add cottage cheese, 1 cup of Parmesan, ¾ of the package of mozzarella, chopped parsley, ½ teaspoon salt, and ¼ teaspoon pepper. Mix to combine. Set aside.
  4. Ladle ¼ of the sauce into a 9 x 12 x 2-inch rectangular baking dish, spreading the sauce over the bottom of the dish. Then add the layers as follows: ¼ of the pasta, 1/3 of the cottage cheese mixture, and ¼ of the sauce.
  5. Repeat the layering twice. End with a layer of noodles, then sauce, and sprinkle with remaining ¼ cup Parmesan and ¼ bag of mozzarella.
  6. Cover with foil and bake for 45 minutes, removing the foil for the last 10 minutes of baking.
  7. Allow to sit for 5 minutes before serving.
