MID'S Super Healthy Turkey Chili

MID'S Super Healthy Turkey Chili

This delicious chili easily freezes so double the batch and place half in freezer safe containers and freeze for up to 3 months. Defrost and reheat as needed during those super busy weeks of shuttling kids around!

INGREDIENTS

  • 2 Tbsp. olive oil
  • 1 yellow onion, diced
  • 3 garlic cloves, diced
  • 1 lb. lean ground turkey - 93/7
  • 1 yellow bell pepper, cut into ½” chunks
  • 1 orange bell pepper, cut into ½” chunks
  • 1 red bell pepper, cut into ½” chunks
  • 1 32 oz jar MID’S Meatless Pasta Sauce
  • 2 Tbsp tomato paste
  • 2 15 oz cans diced and seasoned tomatoes
  • 1 28 oz can of peeled tomatoes - chopped
  • 1 15.5 oz can of dark kidney beans, drained
  • 1 15.5 oz can of light kidney beans, drained
  • 1 bottle of dark beer
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/8 tsp cayenne pepper
  • salt and pepper to taste

DIRECTIONS

  1. In a large stock pot over medium high heat add the olive oil.
  2. Sauté the diced onion for 5-7 minutes until tender. A
  3. dd the chopped garlic ground turkey meat. Cook, over medium heat, for 5 minutes, stirring often.
  4. Add all of the peppers.
  5. Season with ¼ teaspoon of kosher salt and a couple grinds of black pepper and sauté for another 5 minutes, stirring frequently.
  6. Add Mid’s Pasta Sauce through light kidney beans (above) and increase heat and bring pot to a low boil.
  7. Add dark beer and lower heat to simmer.
  8. Add chili powder, cumin, and cayenne pepper and simmer for at least 25 minutes. (May simmer at lowest heat for up to 2 hours – your house will smell great!)
  9. Check seasonings; add salt, pepper, or more cayenne as desired and garnish with your choice of toppings and enjoy.

Garnish ideas:

  • Grated cheddar or Monterey Jack cheese
  • Sour cream
  • Chopped chives

Options:
1) Add sweet and hot turkey sausage to the meat mixture for a more robust flavor and meatier chili. Remove sausage from casings first.
2) Use a Mid’s Meat sauce for a two-meat chili
3) Freeze in individual freezer containers and put in refrigerator on a Sunday afternoon so lunch is ready to go for the workweek!
